The course "Master Classical Pizza" is only for expert pizza-chefs who want to learn the tecnique for making real Neapolitan Pizza. It lasts 2 weeks (for a total amount of 40 hours).

In the first week we analyse the differences between Neapolitan pizza and other kind of pizzas, the second week we practice the tecnique.

FIRST WEEK (from 10,00 a.m. to 14,00 p.m.)

  • MONDAY: Historical notes and characteristics of real Neapolitan pizza; origins and tecnique of building a Neapolitan oven and explanation of the traditional way of making dough.

  • TUESDAY: Explanation of the tecnique of how to prepare and shape the dough.

  • WEDNESDAY: Explanation of the tecnique of how to handle the pastry disc and different ways of lamination.

  • THURSDAY: Explanation of the tecnique of how to bake in most traditional way.

  • FRIDAY: Explanation of the tecnique of how to cook by using different types of temperatures and analyse the results.

SECOND WEEK (from 10,00 a.m. to 14,00 p.m.)

  • FROM MONDAY TO FRIDAY: We carry out all the phases of how to make the real Neapolitan pizza with the supervision of the teacher.
