The course of "Great Master of Classical Pizza" is organized to give students a complete knowledge about the production cycles of the Classical Neapolitan Pizza, about the management of pizza-restaurant, about marketing and about the correct equipment to produce Classical Neapolitan Pizza, following traditional rules.

This course is a MASTER in Neapolitan Classical Pizza (only who comes from Naples and knows deeply Neapolitan traditions can teach the art of pizza!) and it is addressed to people who want to acquire knowledge to manage a pizza-restaurant or a chain of pizza-restaurants.

The course is based on two specific subjects that will be developed during the lessons:

  1. ORGANIZATION OF MANAGEMENT AND MARKETING FOR PIZZA RESTAURANTS WITH THE TRADE-MARK "CLASSICAL NEAPOLITAN PIZZA"

  2. ADVANCED FUNCTIONAL COMPETENCES ABOUT MAKING "NEAPOLITAN CLASSICAL PIZZA"

GENERAL THEORICAL ASPECTS:

  • Study the foodstuffs and organoleptic characteristics 

  • Study the materials for production

  • Study the prophylactic praxis concerning gastronomy

  • Management of human resources

  • Management of marketing and trademarks 

  • Study of standards image of "Classical Neapolitan Pizza Restaurant"

OPERATING ASPECTS:

  • Planning of menu

  • Management of warehouse and provisioning 

  • Operating management of Pizza

TRAINING FOR PROFESSIONAL STUFF (1ST LEVEL ):

  • Operating Form serving to clients

  • Operating Form Production Line

  • Form Baker

  • Form Pizza-chef

  • Form Tutor

  • Operating Form Administration and accounting

The first level of training will be followed by a further level of " Master".
